in close association with industry trainers, to provide features that
professionals needed. The special features of the 10" Cooks Knife include:
Exceptionally broad blade, for improved knuckle clearance, and longer sharpening
life. Narrow bolster, near the blade edge, for easier sharpening: the blade can
be sharpened down a long way before the heel becomes thick and intrusive. Widest
point is actually 55mm from the bolster (not at the bolster), so the blade rolls
beautifully from front to back. This avoids the heavy thump at the end of the
cutting stroke that is experienced with straighter blades, so that less shock is
transferred to the hand.Counter weighted in the tail, for better balance of the
big blade.
